Grilled Mushrooms with Garlic and Olive Oil

A really tasty, low-calorie dish that's perfect for a backyard cookout. I love mushrooms, and grilled mushrooms are simply irresistible — especially in summer, when the whole family heads out for a picnic. These always make lunch, dinner, or a picnic feel special.

  • Make a simple marinade by combining olive oil, pepper, salt, crushed garlic cloves, and maybe some fresh herbs. Stir it together, then add the mushrooms. Don't wash the mushrooms — at least not store-bought ones. They soak up liquid like a sponge, and you don't want any extra moisture in them. Let them marinate for about an hour. Then lay the mushrooms on the grill and turn them every 5 minutes so each side faces the glowing coals. Serve the grilled mushrooms up nice and hot.
