Banana Syrniki with Flour and Eggs

If your kids won't touch cottage cheese, you just have to dress it up a little! Here's another cottage cheese recipe for kids that's been passed down in my family for generations. Syrniki (cottage cheese fritters) are a traditional treat in Russian and Ukrainian cooking. Some cooks insist you shouldn't add flour, but I can't picture them without it — and I even put my own spin on them with a banana. The result is incredibly good: a real treat for kids and grown-ups with a sweet tooth alike.

  • Here's how I make banana syrniki. Press the cottage cheese through a sieve, then mix it with the eggs, sugar, and a pinch of salt. Mash the banana with a fork (or grate it, or blend it) and stir it into the curd mixture. Knead in just enough flour to bring the dough together. Shape small patties and fry them in a skillet with melted butter — or bake them in the oven. Once the banana syrniki are done, arrange them on plates and top with jam or sour cream. This dish is great for kids ages two and up.
