- Peel the tomatoes and chop them (score an X on the bottom of each and dip them in boiling water to loosen the skins — or just use good-quality canned whole tomatoes in juice, again the thick kind). In a large saucepan, gently sauté the garlic in the olive oil. Add the rest of the ingredients and simmer for 30 minutes, stirring now and then. If you plan to can the sauce for storage, use coarse salt.
