Eggless Kefir Pancakes

Make an out-of-the-ordinary breakfast — fluffy, mouthwatering American-style pancakes! Pancakes cook on a dry pan, and that's exactly what draws me to them, since I'm not a fan of the traditional butter-fried blini and fritters. And the recipe I'm sharing today is a real gem, because it needs no eggs at all — and the pancakes turn out every bit as good as regular ones. There's nothing like starting the morning with a stack of pancakes topped with berries or drizzled with syrup! By the way, you can also make them unsweetened and eat them with, say, cheese and fresh herbs.

  • Here's all it takes to make these delicious pancakes: 1. Pour the kefir into a bowl. 2. Add the sugar, salt, baking soda, and vegetable oil, and mix well. Let it sit for 10 minutes. 3. Sift in the flour and stir it into the kefir — mix, but don't beat it. The batter should be about as thick as heavy sour cream. Let it rest another 10 minutes. 4. Heat a skillet. Remember, these pancakes cook on a dry pan — no oil for greasing. 5. Pour 1–2 tablespoons of batter onto the hot pan for each pancake, depending on the size you want. You can make them bigger if you like — it's all up to you. 6. As soon as bubbles form on the surface, flip and cook the other side for about 20 more seconds. They cook up fast! 7. Stack the finished pancakes and top them however you like — fresh berries, honey, melted chocolate, and so on. Enjoy!
