Chicken Envelopes with Honey Mushrooms

A great dinner for the whole family — delicious and nourishing! Don't forget to pull out the toothpicks after frying. The easiest way: hold the envelope steady with a fork and use kitchen shears to pull each toothpick out by its tip. Stuffed meat envelopes are a quick way to make something tasty and new for your family, since you can choose the filling based on whatever's in the fridge. Just be sure to thaw the meat ahead of time!

    1. Cut the chicken fillet into thin slices, season with salt and pepper, and pound with a meat mallet until the pieces are thin and pliable enough to fold like an envelope. 2. Sauté the honey mushrooms and onion in a skillet until done. I fry the onion until golden first, then add the mushrooms and cook over medium heat, stirring, for another 5–7 minutes. Drain off any excess oil. 3. In a separate bowl, combine the sour cream with the drained mushrooms and onion. The mixture should be nice and thick. 4. Place 1–2 teaspoons of filling in the center of each chicken slice (adjust to the size of the piece) and fold it into an envelope. Secure it with a toothpick if needed. 5. Set out one bowl with a beaten egg and another with breadcrumbs. 6. Gently dip each envelope into the egg, then coat it well in breadcrumbs. 7. Fry in a preheated skillet with sunflower oil for 7–10 minutes, turning once. 8. Serve hot. Enjoy!
