The preparation of Sheikh Mahshi will take time and patience. This culinary recipe is worth it to surprise the household and guests. For Sheikh Mahshi, we do not cut the tails of eggplants, but cut them short. Then peel the peel with strips every centimeter. We will get striped eggplants, which we fry in vegetable oil in a hot frying pan on each side until golden brown. To remove excess oil from the fried "stripes", put them on a paper towel. While the eggplants are cooling, chop the onion and fry in the same oil (drain the excess oil before that). As soon as the onion has turned golden, add minced meat to it. Fry the minced meat until all the juice evaporates. And even after the juice has evaporated , we will fry it for another 2 minutes . Then add pepper, cinnamon, cardamom, chopped pine nuts, salt and mix everything thoroughly. In the cooled eggplants, we make an incision along and slightly squeeze from the ends. We will get pockets in which we put the minced meat, flattening it down. Tomatoes are covered with boiling water, peel and wipe. Sheikh Mahshi (stuffed eggplants) put in a mold, pour mashed tomatoes, 100 g of water, sprinkle with salt, black pepper. Bake eggplants in a preheated oven for 30-40 minutes. Ready-made food can be sprinkled with grated cheese. The dish is quite suitable for a festive table.
