- Sheikh Mahshi takes a bit of time and patience, but the payoff is a dish worth making to impress family and guests. Don't trim the stems off the eggplants completely — just cut them short. Then peel the skin off in stripes, leaving about a half-inch of skin between each stripe, so you end up with striped eggplants. Fry them in vegetable oil in a hot skillet until golden on all sides, then set them on paper towels to drain the excess oil. While the eggplants cool, chop the onion and fry it in the same oil (pour off the extra first). Once the onion turns golden, add the ground beef. Fry the meat until all the liquid has cooked off, then keep frying it for another 2 minutes. Now stir in the pepper, cinnamon, cardamom, chopped pine nuts, and salt, and mix thoroughly. Slit each cooled eggplant lengthwise and gently squeeze the ends so it opens into a pocket; fill each pocket with the meat, pressing it in lightly. Blanch the tomatoes in boiling water, peel them, and purée. Arrange the stuffed eggplants in a baking dish, pour the puréed tomatoes over them, add about 1/2 cup (100 ml) water, and season with salt and black pepper. Bake in a preheated oven for 30-40 minutes. Sprinkle the finished dish with grated cheese if you like. It's right at home on a holiday table.
