- Irish cooking is famous for its meats and sausages, and black pudding (a traditional blood sausage) with gooseberries is one of the best known of the bunch. It makes a great appetizer alongside a drink, or a hearty addition to any vegetable side. This one does take a little know-how, so it isn't the best pick for a first-time cook — but once you've made it, you'll be won over by its tender texture and the warm aroma of the spices. Start by removing the casing from the black pudding, then chop the green onion and red bell pepper into small dice — it makes them easier to work with. Make a batch of mashed potatoes ahead of time and stir in the sausage, onion, pepper, mustard, and vinegar. Mix thoroughly until smooth, with no lumps. Roll this "dough" into tubes about 2 inches long, dredge them in flour, brush with beaten egg, and coat in breadcrumbs. Drop the sausages into a skillet of hot vegetable oil and fry until golden brown. Lift them out and wrap them in a cloth to keep warm. Meanwhile, stir the sugar into the water, set the pan over medium heat to make a syrup, add the gooseberries, and cook for 10 minutes. Plate the sausages, spoon the syrup over the top, and that's it — enjoy!
