- Wash and peel the potatoes and cut them into large cubes. Transfer to a saucepan, add enough water to just cover them, and set to simmer until tender. 2. Turn the canned meat out of the tin and mash it lightly with a fork. 3. Wash and peel the carrot and grate it on the coarse side of a grater. 4. Peel and rinse the onion and chop it finely. 5. Heat a skillet with vegetable oil. Add the onion, a pinch of salt, and a pinch of sugar. Fry until golden, about 5 minutes — don't forget to stir! 6. Add the carrot and fry another 6 minutes, until soft. 7. Coarsely chop the washed tomato, add it to the onion and carrot, and simmer for 5 minutes. 8. Coarsely chop the garlic, add it to the rest of the vegetables, and keep on the heat for 1 minute. 9. Add the tomato paste and the canned meat, stir, and bring to a boil over low heat. 10. Season the cooked potatoes with ground black pepper, curry, paprika, and salt. Mix well. 11. Add the potatoes to the simmering meat and vegetables, and pour in the potato cooking liquid (adjust the amount to your taste). Stir and bring back to a boil. 12. Add the dried herbes de Provence and the coriander. Taste, and add more pepper and paprika if you like. If it needs more salt, add that too. 13. Add the canned green peas. Stir. Let it barely simmer over low heat for 5–10 minutes. 14. Sprinkle the finished potatoes and meat with fresh herbs. Enjoy!
