Stewed Garlic Scapes

Prime season for foodies and garlic lovers — and it tastes a lot like mushrooms! You have to hurry to catch the first garlic harvest. I tried this dish once, and now it's a favorite. Even people who don't care for garlic or its smell love the taste — you won't be able to pull them away. The finished dish has a slightly sweet flavor, and you won't immediately guess what the side is made from.

    Put them in a skillet to stew with a little water until they change color, then add the bay leaf and the finely chopped onion.

    Grate the small beet and the carrot.

    Now add all the vegetables and the vegetable oil to the scapes and keep stewing over medium heat for 10 minutes.
