  • Seafood — so many delicious things hidden in that one word. I can't imagine my meals without it anymore, and I try to work all kinds of seafood into my cooking. So I was delighted to learn that Portuguese cuisine has its own variety of seafood dishes — and here's one of them I want to share. Let me introduce the star of the show: stewed squid. Squid isn't just wonderfully tasty, it's also very good for you, which is exactly why I chose it. I cut the squid into thin strips. I finely chop the onion and mince the garlic. I peel the tomatoes and cut them into wedges. I combine the chopped onion and tomatoes in a sauté pan, cook them in olive oil, add the sugar, and cover tightly until the tomatoes release their juice. Then I turn back to the squid and add it to the vegetables. I pour in a light white wine, along with a little lemon juice. Now I season everything with salt and pepper, and add ground basil, finely chopped parsley, and garlic to the pan. I stew the dish, stirring, for 2–3 minutes, then take it off the heat. I usually try to serve it right away, since its full flavor really comes through only when hot. My family adores this wonderful recipe — I think your loved ones will, too.
