  • You know, I used to wonder the same thing — what exactly is tofu? It turns out it's a kind of soy curd, made by adding a coagulant to fresh, hot soy milk. Tofu has been made for a very long time, and today it's a staple of Asian cooking, especially popular with vegetarians. It's also one of the most versatile and economical protein foods there is — and it can even be frozen for up to five months. Tofu is low in calories, fat, and carbohydrates. It has almost no flavor of its own but soaks up other flavors beautifully and pairs well with all sorts of ingredients — with chili, with cocoa, in a goulash or a soup, tofu always takes on a flavor of its own. It's a great food for anyone with a sensitive stomach, ideal for people with heart conditions, and often included in the diets of those allergic to eggs or milk. So, shall we start cooking? We're making stewed tofu with eggs. For this recipe, lightly simmer the tofu in broth, then mash it with a fork. Boil the noodles, drain them in a colander, and rinse. Clean the mushrooms, rinse them, and cut them into thin strips. Now combine the tofu with the other ingredients: add the raw eggs, the prepared mushrooms and noodles, and the bell pepper cut into strips. Stir everything together gently, then season with salt and pepper. Drain the canned shrimp and add them to the tofu, and stir again. I hope you have a steamer! Line it with cling film and spread the mixture on top. Steam the dish for about 15 minutes. Peel off the film, cut the dish into pieces, and serve with soy sauce, garnished with fresh herbs.
