Pork and Bean Soup in the Slow Cooker
A fragrant, rich, hearty soup with meat and tomatoes! Pork soup in the slow cooker doesn't take much effort, though it does take a good bit of time — and mostly hands-off time at that, since first the beans soak and then the soup gently simmers away on its own. It comes out thick and rich, with a truly heavenly aroma. A great way to delight and surprise your family and add some variety to the menu when the usual soups have grown a little stale.

- Start by soaking the beans in clean water for 5 hours. When the time's up, drain and rinse them, then put them in the slow cooker pot. Wash the pork well, pat it dry with paper towels, and cut it into medium pieces. Add the meat to the beans in the pot. Pour in the broth to cover the beans and meat — any broth works: chicken, meat, or vegetable, and if you don't have any, just use an equal amount of water. Add the tomatoes in their own juice, then the tomato paste, and season with salt and spices to taste. Bold, aromatic spices are best here — coriander, for example; a little ground ginger works nicely too. Add the garlic powder. Stir everything well. Close the lid, set the "Slow-simmer" mode, and cook for 6 hours. If your cooker doesn't have that setting, use the "Stew" program instead, at the lowest temperature possible and for at least three hours. When it's done, let the soup rest in the closed cooker for another 15 minutes, then ladle it into deep bowls. A little grated Parmesan or any other flavorful cheese makes a great finishing touch, as do fresh herbs — dill, parsley, or cilantro — either finely chopped or set on each bowl as a whole sprig.
