- Pour the beer into a skillet and set it on the stove to reduce. 2. Slice the bread and cut off the crusts (you can turn those into breadcrumbs later). Cut the crumb into cubes. To the crumb add the semolina, flour (1 tbsp), salt, eggs, milk, and a handful of chopped parsley. Work everything together by hand until smooth. Lay the bread mixture on a sheet of plastic wrap and roll it up into a log. Fold in the ends, then wrap it in a second layer of wrap. Tie the log off in several places along its length. Drop it into boiling water to cook. 3. Cut the pork into small pieces and dust it with flour (2 tbsp). 4. To clean the mushrooms, toss them with a handful of flour, cover with cold water, and rub them together with your hands, then simply rinse — they'll come out very clean. Halve the large mushrooms and leave the small ones whole. 5. Peel and chop the garlic. (The beer is still reducing.) Strip the leaves from the rosemary and finely chop them. 6. Heat the vegetable oil (3 tbsp) well in a skillet and add the mushrooms. Let them brown. Once they've picked up some color, add the garlic and let it heat through. Transfer the mushrooms to a large pot. 7. Reduce the beer to a thick syrup, then take it off the heat. 8. Add 2 tablespoons of vegetable oil and the butter to the mushroom skillet. Warm the rosemary in the oil-butter mixture, then add the pork and brown it. Sprinkle in the leftover flour from the pork and cook until it smells nutty. Season with salt. Add the finished meat to the mushrooms. 9. Add the reduced beer and the water to the pot with the meat and mushrooms. Let it simmer over medium heat until tender. 10. Unwrap the bread log, cut it into knedliky slices, and set them in the center of the plate. Spoon the meat, mushrooms, and sauce over the dumplings. Sprinkle with parsley. Enjoy!
