- Into one bowl, grate the peeled zucchini and the tomatoes on the large holes of a box grater. 2. Season the grated zucchini and tomatoes with salt and pepper, stir, and set aside. 3. Stuff the shells with the ground meat and arrange them in a single layer in a deep skillet or sauté pan. 4. Add a little water to the grated zucchini-and-tomato mixture if needed, then pour it over the stuffed shells so they're completely covered. 5. Bring the dish to a boil over high heat, turn the heat down to low, cover, and cook for 20 minutes. A minute before it's done, add the garlic and bay leaf. 6. Serve the finished dish with a dollop of sour cream. Enjoy!
