Sushi Cake (Sushi Salad)

Sushi and roll lovers will truly appreciate this dish! If you don't have a bamboo mat or don't know how to roll sushi but really want to wow your guests with Japanese cuisine, make a cake out of the very same ingredients! It's indistinguishable from sushi and rolls in taste, and a cake like this takes a fraction of the time to make.

    Gather all the ingredients you need to make the sushi cake.

    Take short-grain rice and rinse it well under running water. When cooking rice for sushi, the rice-to-water ratio should be 1:1.15. You can cook the rice in a regular pot or in a multicooker — I use a multicooker. To cook it in a pot, first bring the rice to a boil over high heat, then turn the heat down to its lowest and cook the rice for 15 minutes. Don't open the lid or stir the rice. After the rice is cooked, wait another 15 minutes.

    Now make the rice dressing. Warm 50 ml of rice vinegar slightly and dissolve 1 teaspoon of salt and 2 level tablespoons of sugar in it.

    Pour the dressing over the cooked rice and gently fold it in with a wooden spatula.

    Cut two sheets of nori seaweed into small squares with scissors.

    Now assemble the sushi cake. Use a 15 cm serving ring. For the first layer, lay the nori pieces close together, trying to leave no gaps between them.

    Spread half the rice as the next layer.

    Put the cream cheese in a piping bag or an ordinary bag, snip off the corner, and pipe it out in a spiral.

    Peel the cucumbers and cut them into thin slices. Lay a layer of cucumber over the cream cheese.

    Lightly toast the sesame seeds in a dry skillet and sprinkle them over the layer of cucumber.

    The next layer is sliced crab sticks (crab meat). If you don't like crab meat, you can replace this layer with red fish — that is, the fish layer would appear twice.

    For the final layer, arrange the sliced red fish. Any lightly salted fish will do: pink salmon, salmon, or trout. Sprinkle the top of the sushi cake with sesame seeds.
