Preparing dough for goats.
Mix until sugar dissolves: sugar, honey, margarine on fire in a saucepan. Do not let the mass boil. Then remove from heat and cool to 68 degrees, not lower.
Divide the flour into 2 parts, mix one part with all the spices and spices, add zest, baking powder and cocoa.
Beat the eggs. Add them to the honey mass in two parts. Pour in the rum.
Add the mass with spices in parts to the egg mass and mix until smooth. Add flour and knead the dough. It will turn out elastic, elastic, homogeneous, dense. It will take about 25 minutes to knead. Flour may remain superfluous, you do not need to mix it all, look at the dough itself.
Put the warm dough in a plastic bag and put it in the refrigerator overnight.
On the second day, make patterns of figures of your gingerbread goats. Roll out the dough into a thin layer and cut out your figures.
Cover the baking sheet with paper and bake the gingerbread for 30 minutes at 180C. It may take even less minutes, look at the oven.
Decorate ready-made gingerbread to your liking - paint as you want. Drawings are applied using icing sugar, which can be tinted with dyes to have different colors.
Gingerbread should "ripen" for up to two weeks. To do this, put them in a suitable box and put a slice of fresh apple with them. This will accelerate the "maturation" of gingerbread. Or apple peel.
