Since this wonderful Castle Cake will require a lot of effort from us for decoration, it is better to use ready-made purchased cakes for it. The bottom cake should be bigger than the top one. We select the sizes ourselves, the extra part from the cake can simply be cut off. Beat the cream with a fixative to a thick foam and coat both cakes with them. Melt white chocolate in a water bath, add all the other ingredients to it and then completely cover the top and sides of the cake with the resulting mass. The roller from the food foil is divided into four parts, each is well wrapped with food wrap – these will be the towers of our Castle cake. Each tower of the cake is wrapped with pink mastic and left to harden for six hours. Melt dark chocolate in a water bath and smear it on the foil with a thin layer. Let it freeze, then cut out the windows and doors from the resulting "material". All decorations are glued to the cake with the help of glaze, we also apply drawings on dark chocolate with it. We spread almonds beautifully on the sides of the cake to make "stone walls". And the food from the fairy tale is ready. We prepare mastic: we dissolve soaked gelatin on the stove, pour into it 1/3 tsp lemon juice and the same amount of beet juice. After the gelatin is mixed with powdered sugar – our mastic should have a pink color.
Glaze: beat powdered sugar with protein. Well, that's it, our Castle cake is ready, bon appetit!
