To prepare the shortbread dough, mix the softened margarine with egg yolks in advance (we will need the whites for the souffle), ground with sugar. Add a little soda and citric acid to the wheat flour and slowly mix it with margarine and yolks. Knead the dough and put it in the refrigerator for half an hour or an hour. Prepare the apples for the souffle: cut them in half, peel them from the core and peel and bake in the oven. Then turn them into a puree using a blender, add sugar and cook over low heat until a thick mass. Whisk the egg whites, add applesauce to them and whisk well again. Now it remains to form the cake itself: take a refractory mold, put the dough on the bottom, distributing it also along the walls, and place the apple souffle on top of the bliss. Bake the pie in a preheated oven for about half an hour. When the souffle is browned, it means that the pie is ready. Turn off the oven and leave it inside until it cools down.
