Step 1:
How to cook cheese soup with chicken and mushrooms? Prepare the products. You can take any processed cheese to your taste. Mushrooms, too, I have champignons. Instead of chicken breasts, you can use other parts of the chicken or take any meat.
Step 2:
First of all, put the chicken to cook. To do this, pour water into a saucepan, necessarily good, filtered or bottled. Transfer the washed breast to the water and put it on the fire. Bring to a boil, removing the foam. Then turn down the heat, cover with a lid and leave to cook for half an hour.
Step 3:
Wash and peel the carrots. Rinse with water. Peel the onion from the husk. Cut the onion into small cubes, and grate the carrots on a coarse grater.
Step 4:
Pour vegetable oil into a frying pan, heat it up a little and put the carrots and onions. Fry them over low heat for about three to five minutes, until golden brown.
Step 5:
Peel and slice the champignons. If you decide to take forest mushrooms, pre-boil them.
Step 6:
Put the chopped mushrooms to the onions and carrots and continue to fry, but already under the lid. Mushrooms will give a lot of juice and decrease in volume.
Step 7:
Hold the roast with mushrooms on low heat for about five minutes. Next, turn off the heat and leave it to cool slightly.
Step 8:
Wash the potatoes, peel and cut into cubes.
Step 9:
Meanwhile, the breast is cooked, take it out and let it cool down a little. And put the potatoes in the broth. Cut the breast into small pieces and send it after the potatoes. Add salt, but only a little, the cheese itself is very salty, it is better to add salt after adding it. Cook for about 10 minutes (focus on your stove).
Step 10:
Add the roast to the soup. Cook after boiling for about 5 minutes.
Step 11:
Add the melted cheese to the soup, stir until the cheese is completely dissolved. Now you can try the soup and feel free to add more if necessary.
Step 12:
Bring the soup to a boil and turn off the heat. Let him stand for a little, 15 minutes, so that all the components become friends. Bon appetit!
The soup turned out very tasty! Due to the cheese and its bright taste, no additional spices were needed, even the chicken breast here is not boring at all.
You can cook broth for this soup from any part of the chicken, or you can make such a soup without meat at all, with only mushrooms. Students cook cheese soup even without mushrooms - water, roast, potatoes and cheese.
Choose only good quality cheese, without vegetable fats, the taste of the soup depends on its taste.
You can prepare crackers for cheese soup and sprinkle on top before serving.
The amount of water specified in the recipe can be reduced or increased at your request, depending on whether you want to get a thick or more liquid soup.
Chicken can be replaced with turkey or any other type of meat at your request. But keep in mind that in this case, the cooking time and calorie content of the dish will change.
