Cooking method
Freshly frozen fish is promptly cut up. We remove the bones and skin. You will only need fillets. Wash the mackerel, salt and add spices. We roll the fillet into a roll, then wrap it in parchment, and twist the edges of the paper.
Let the fish stand at room temperature for sixty minutes, after which we send it to the freezer.
After a few hours (after the fish is completely frozen), you can start tasting. We take it out of the cold, remove the paper and cut it thinly with a knife.
