This time I decided to cook a vegetarian version of okroshka, since I didn't have boiled meat, and sausage is not a dietary product at all. Even without meat and sausage, the okroshka turned out very tasty.
To prepare dietary okroshka on whey, first boil eggs and potatoes. Then we cool them and clean them. To make boiled potatoes and eggs cool down faster, you can pour them with ice water. Besides, after that, the eggs will be easier to clean.
Cut potatoes and eggs into cubes.
With fresh cucumbers, cut off the green skin with a knife. Peeled cucumbers make the taste of okroshka more tender than with unpeeled ones. Cucumbers are also cut into cubes.
All the greens (parsley, dill, green onions and, if desired, cilantro) are well washed and dried. Finely chop the greens.
In a separate bowl, combine all the ingredients of the okroshka grounds (potatoes, eggs, cucumbers and greens). You can also add radishes cut into thin strips to this version of okroshka. It is better to store the thick part of the okroshka and the liquid separately in the refrigerator and combine them only in a plate, since the okroshka spoils very quickly.
When serving okroshka in a plate with a slide, we put the grounds.
Pour the whey into a glass, add a spoonful of sour cream and salt to taste. Mix well so that the salt and sour cream dissolve and the liquid becomes homogeneous.
Pour the resulting liquid into a plate and serve to the table.

Basic principles of cooking dietary okroshka:
- smoked meats and sausage need to say "no" and replace them with boiled chicken meat or boiled fish;
- when preparing dietary okroshka, it is not necessary to be too small: the larger the vegetables are cut, the more fiber they contain, which gives satiety and normalizes digestion;
- one serving should consist of 120-150 grams of grounds (vegetables and herbs) and no more than 200 milliliters of liquid, no more than one potato and one egg, as well as a moderate amount of fish or meat;
- in no case do not add mayonnaise to the okroshka: it is very high in calories. Better put one small spoonful of sour cream.
