In the people, such a snack is a little ironically called "shitty", but this, of course, is a derivative of the name, but certainly not its characteristic. Horseradish appetizer is a very interesting seasoning that will add new colors to already familiar dishes. Her cooking recipe is quite simple. I got it from my mother, who learned it from her mother. Thus, it can even be called our family snack and it fully justifies this high responsibility every time.
To begin with, rinse the horseradish roots properly, peel them and cut them into small pieces. Then they should be filled with cold water and left for a day. Then the extra bitterness will go out of the horseradish, but the whole flavor will remain. Drain the water and pass the roots with plums through a meat grinder. Pour boiling water over the resulting mass, and when everything cools down, add salt, vinegar and sugar. Some still add raw beets, but this is for an amateur, so proceed from your tastes. Roll the resulting mass into a sterilized jar, and let it brew a little.
That's the horseradish appetizer. Under it, any food will seem twice as delicious and piquant.
