Mayonnaise and Cucumber Sauce
A zesty sauce of fresh cucumber and mayonnaise! Mayonnaise and cucumber sauce is very quick and easy to make! You can serve it with savory crackers, toast, or croutons, or simply with a slice of fresh soft bread.

Step 1:
Gather the ingredients you'll need for the sauce. You'll need fresh cucumbers, mayonnaise (use any kind you normally have on hand, store-bought or homemade), garlic, salt, ground black pepper, and crisp fresh dill. Ideally the cucumbers should be in season, but the ones sold in supermarkets in winter will work for this sauce too - it's not critical here!

Step 2:
Wash the cucumbers thoroughly and trim the ends. If the skin is bitter or very tough, peel it off too. Gently grate the cucumbers on a fine grater. Add the grated cucumbers to the bowl with the mayonnaise.

Wash the fresh dill, shake it well, remove any poor sprigs (dry or rotten), and chop it finely. If the stems are thick and stiff, cut them off and use them for other dishes (borscht or rassolnik, for example). Add the chopped dill to the mayonnaise and cucumbers. Peel the garlic, grate it on a fine grater, and add it to the ingredients you've prepared.

Salt and pepper the prepared ingredients and mix gently. The mayonnaise and cucumber sauce is ready! It's best not to store the finished sauce in the fridge for long (because of the perishable cucumber juice), so plan to make a small batch for one or two servings. Enjoy!
- Ground black pepper works best in this sauce if it's freshly ground. Warm the peppercorns just a little in a dry skillet to bring out the aroma, then grind them in a mortar or coffee grinder and add the amount you need to the sauce. This thick mayonnaise and cucumber sauce pairs nicely with boiled or fried potatoes (or even better, oven-baked country-style potato wedges), pilaf, or buckwheat. The sauce has a harmonious, balanced flavor in which all the ingredients come together beautifully!
