A very tasty vegetarian dish is soy salad with tomatoes. I somehow wanted something like scrambled eggs with tomatoes, I decided to "take a chance" and fry soy cheese with tomatoes. It turned out very well!

First you need to choose the right tofu. Smoked and with fillers will not work. It is better to take a local, not an American one. I cooked with hard tofu, but I want to try it with soft. I plan to mash soft tofu, add soy mayonnaise to get an "egg consistency" of the finished dish.
Cut tofu into cubes, tomatoes into slices, chop onions. Green onions can not be cut, just cut the feathers in half.
We put everything except green onions immediately in a frying pan (with oil), but do not mix, and fry separately for a while so that the tofu has a golden crust. Salt, pepper, sprinkle with basil or other herbs. Although you can not add anything at all.
Then add green onions, then soy mayonnaise and remove from heat.
