Cucumber, Mushroom, and Cheese Salad

Quick, very simple, and very tasty — for a celebration! This cucumber, mushroom, and cheese salad makes a great light appetizer for a holiday spread. It's flexible: you can swap any of the ingredients for others, or add new ones. You can make it layered or tossed.

    How do you make cucumber, mushroom, and cheese salad? Gather the ingredients. You can use any mushrooms: salt-brined, pickled, or fried. Wash the vegetables and eggs and pat them dry. Any mayonnaise works here, including vegan. Hard-boil the egg.

    If your cucumbers have thick or bitter skin, peel them. Then cut the cucumber into thin strips, julienne the peeled carrot into matchsticks, and grate the cheese.

    Cut the hard-boiled egg into cubes.

    Start building the salad in a suitable bowl. Ours is layered, so we'll lay it up in layers. The first layer is egg. Put the diced egg in the bottom of the bowl. Keep in mind the order of layers is flexible — you can arrange them however you like. Or you can simply toss all the ingredients together and dress them with mayonnaise.

    Lay chopped or whole small pickled mushrooms over the egg.

    Pipe a lattice of mayonnaise over the mushrooms.

    Now add a layer of cucumber to the bowl.

    On top of the cucumber, thin matchsticks of raw carrot.

    Pipe on the mayonnaise lattice again.

    Cover the top with grated cheese.

    Garnish the salad with fresh herbs and a whole mushroom. I made an individual layered portion, but you can build it on a single platter.

  • How do you tell if an egg is fresh? Crack it into a separate dish. First and foremost, there should be no off smell. The white of a fresh egg will be clear and clean. The yolk shouldn't spread, and it'll be glossy, domed, and even.
