Bahor Salad with Sausage
A bright, hearty, nourishing salad with the flavor of okroshka. Bahor salad is a dish of Uzbek cuisine. It comes out filling thanks to the meat. The original uses boiled beef or lamb, but for an everyday table you can swap in sausage. The salad's colorful palette is reminiscent of the bright patterns Uzbek artisans weave into their fabrics. It's simple to make — just chop everything and toss it together. Let's make Bahor salad with sausage; I'm sure it'll become a favorite in your repertoire.
Cooking method
-
Step 1:
The ingredients.
-
Step 2:
Let's start on the salad. First, cut all the vegetables: tomatoes, cucumbers, onion. They look prettier cut into strips, but you can dice them too. If the onion tastes sharp, cut it up, pour boiling water over it, then rinse it in cold water.
-
Step 3:
Cut the sausage into strips too, and the eggs into cubes. Press 2 cloves of garlic into the salad.
-
Step 4:
Next come the herbs and any hard cheese. Finely chop the herbs and grate the cheese on the coarse side; you can set some cheese aside to garnish the salad.
-
Step 5:
All that's left is to season the salad with salt and pepper and add the mayonnaise. You can use sour cream or plain yogurt instead.
-
Step 6:
Toss everything together and taste for salt. Mound it up and garnish the top with grated cheese and herbs.
-
Step 7:
Enjoy!
- You can leave out the mayonnaise, since the salad has plenty of juiciness from the tomatoes and cucumbers; the hard-boiled eggs and cheese add a soft, mellow note, while the onion, garlic, and herbs round out the flavor.
