Bahor Salad with Sausage

A bright, hearty, nourishing salad with the flavor of okroshka. Bahor salad is a dish of Uzbek cuisine. It comes out filling thanks to the meat.     Let's start on the salad. First, cut all the vegetables: tomatoes, cucumbers, onion. They look prettier cut into strips, but you can dice them too. If the onion tastes sharp, cut it up, pour boiling water over it, then rinse it in cold water.

    Cut the sausage into strips too, and the eggs into cubes. Press 2 cloves of garlic into the salad.

    Next come the herbs and any hard cheese. Finely chop the herbs and grate the cheese on the coarse side; you can set some cheese aside to garnish the salad.

    All that's left is to season the salad with salt and pepper and add the mayonnaise. You can use sour cream or plain yogurt instead.
