Cut watermelon pulp into cubes. Mint, basil chop finely. Cut the feta into cubes.
Put part of the watermelon in a salad bowl, sprinkle with herbs on top, lay out the cheese. Then watermelon, greens and cheese again. This can also be done in portioned salad bowls, in glasses, cream bowls.
For the sauce, mix olive oil, balsamic vinegar and honey. Pour the sauce over the salad, sprinkle pine nuts on top (this is optional, you can serve it without nuts, it will still be delicious!).
Before serving, let the salad with watermelon and feta cool in the refrigerator for 10 minutes. Although it is better to cool all the products in advance before cooking, so that the watermelon does not have time to give too much juice.
