There are quite a lot of dough recipes for chebureks and different. The basis is always the same. This is water, salt and flour. In most cheburechnye use this recipe. Firstly, this is a minimum of cheap products, and secondly, these ingredients are enough to prepare a dough that will make delicious crispy bubbly chebureks, which are difficult to refuse and which are in demand among buyers.
To prepare the cheburech dough, pour the sifted flour into a deep bowl. Add salt and pour in cold clean water. Knead the dough. Knead the elastic dough. If you need more flour plus the specified amount, then add a little to make the dough tight. The secret of a successful cheburech dough is its exposure in the cold. We wrap the dough in plastic wrap and put it in the refrigerator for a while while we prepare the stuffing for the filling. Ideally, leave the dough in the refrigerator overnight, then there will be much more bubbles on the pasties from such a dough.
So that during frying the pies do not absorb a lot of oil and do not taste too greasy, you can add a couple of tablespoons of vegetable oil to the ingredients during the preparation of the dough. In addition to the fact that the pies will not be oily, the dough will turn out to be more elastic and pleasant to work with.
A few spoonfuls of vodka are also added to the ingredients for the pasties dough. Vodka also prevents excess absorption of pies during frying of vegetable oil from a frying pan.
The dough and filling are ready, we form pies and fry them in hot fat or oil in a frying pan.
