Quick Strudel from Thin Lavash with Apples and Raisins
A simple, quick take on strudel. The classic version of this dish calls for lengthy preparation, paper-thin dough, and long baking. This shortcut method is perfect for beginner cooks or for when guests show up unexpectedly.
Cooking method

Step 1:
Wash the apples, core them (you can leave the skin on), and cut into small, roughly even pieces.

Sauté the apple pieces with the sugar until they release their juice and turn golden, about 10–12 minutes. Don't leave them on the heat too long — they shouldn't cook down into a purée.

Add the jam (any kind you like) to the apples, stir, and simmer about five more minutes. Sort and rinse the raisins, plump them in hot water, then cool and pat dry. Sort the walnuts and chop them (crush or cut into small pieces).

Lay the lavash (thin flatbread) on a work surface and brush one side with half of the butter.

Spread out the prepared apples, raisins, and walnuts. Smooth the filling over the entire sheet of lavash and sprinkle with cinnamon (you can swap the cinnamon for vanilla or citrus zest if you like).

Gently roll up the lavash without pressing or squeezing. Brush the top of the roll with the remaining butter. Transfer the roll to a prepared baking sheet. Bake in an oven preheated to 400°F (200°C) for about 10–15 minutes. Dust the cooled strudel with powdered sugar. By the way, it's also delicious with honey and Nutella in place of the sugar and butter — a completely different but equally wonderful flavor!

Cut the finished strudel into portions and serve with tea, coffee, or milk. Enjoy!
