Cheese Soup with Bacon and Potatoes in Chicken Broth

  • Personally, I love any cream or puréed soup, but on cold fall and winter evenings you want to treat yourself to something special — warming, hearty, and mood-lifting. This soup turns out not only velvety, satisfying, and smooth, but also beautiful, with a delicate orange color. It's the same creamy processed-cheese soup I love so much, just with a few new ingredients that make it even better. So I recommend making it — it pleases both the stomach and the eye. I could make this soup every single day! By the way, you can keep the base and vary the add-ins. Use your imagination and experiment — try adding corn or bell pepper, for instance. In the pot you'll cook the soup in, melt the butter. Add the finely chopped onion and sauté until translucent. Add the grated or finely chopped carrot and fry for 3–4 minutes. Now add the potatoes, cut into small cubes, and fry another 3–4 minutes. Pour in the broth, salt to taste, and cook until the vegetables are tender. Once they are, take the pot off the heat and purée everything with an immersion blender (be careful not to burn yourself). Return the soup to the heat, bring to a boil, and add the wine. Bring back to a boil, add the cream, and boil again. Now it's time for the cheese — grate it first, then stir it into the boiling soup, stirring constantly until it melts completely and the soup is smooth. As soon as the cheese melts, take the soup off the heat. Heat a skillet and fry the bacon over medium heat, stirring now and then. Set the bacon on a paper towel to blot off the excess fat. Serve right away, topping each bowl with fried bacon to taste. Enjoy!
