Cheese soup with bacon and potatoes in chicken broth

Warming, nourishing and uplifting, tender soup. This is still my favorite soup-puree on processed cheese, only with the addition of new ingredients that make it even more beautiful.

Personally, I really love any cream soup or mashed soup, but on cold autumn-winter evenings, I want to treat myself to something special, warming, nourishing and uplifting.
This soup turns out not only very tender in consistency, not only very satisfying and soft, but also beautiful, as it has a delicate orange color. This is still my favorite soup-puree on processed cheese, only with the addition of new ingredients that make it even more beautiful.
Therefore, I recommend cooking it, because it pleases not only the stomach, but also the eye. I can cook this soup at least every day! By the way, the base of the dish can be saved, but you can add different products. Show your imagination and experiment. For example, add corn or bell pepper.


In a saucepan, in which our soup will be cooked, we send butter, melt it.
Add finely chopped onion. We pass the onion to transparency.
Add grated or finely chopped carrots to the onion, which we fry for 3-4 minutes.
Now add the potatoes cut into small cubes to the pan and fry for another 3-4 minutes.
Fill everything with broth, salt to taste and cook until the vegetables are ready.
When the vegetables are cooked, remove the pan from the stove and turn everything into a puree with a submerged blender (be careful not to get burned).
Return the soup to the stove again, bring it to a boil, add wine.
Bring to a boil again, add cream, boil again.
Now it's cheese time. We must first grate the cheese on a grater. We send it to boiling soup and, with continuous stirring, let it completely melt in the soup so that it acquires a homogeneous consistency. As soon as the cheese melts, we remove our soup from the fire.
Preheat a frying pan and fry the bacon over medium heat, stirring occasionally.
Put the bacon on a paper napkin to remove excess fat.
Immediately serve to the table, adding to each plate a portion of fried bacon to taste.
