Step 1:
How to make German potato salad? Prepare all the necessary products. To prevent the eggs from bursting during cooking, take them out of the refrigerator in advance, wait until they become room temperature.
Step 2:
Wash the potatoes and eggs, put them in a saucepan, pour cold water and send them to the stove. After boiling, reduce the heat to medium and cook until the potatoes and eggs are ready. It will take about 15-20 minutes, depending on the size of the potatoes. You can check the readiness with a toothpick. Drain the boiling water from the pan, cool the potatoes and eggs.
Step 3:
At this time, cut the cucumbers into not very thick circles. Peel and rinse the onion, chop it into small cubes. For salad, you can use any onion, but I recommend taking red salad onions or shallots (if available), these varieties of onions are softer and are great for salads.
Step 4:
Peel potatoes and eggs. To prevent small particles from the shell from remaining on the eggs, I rinse the peeled eggs in cold water and dry them.
Step 5:
Cut the potatoes into circles or cubes, as you prefer. Put the potatoes in a deep bowl or salad bowl.
Step 6:
Chop the eggs as desired, I cut the whole salad into circles.
Step 7:
Send pickled cucumbers to potatoes and eggs.
Step 8:
Next comes the turn of the onion.
Step 9:
Add mayonnaise and mix everything gently. Try it with salt, if not enough-add salt.
Step 10:
When serving, sprinkle the finished salad with fragrant or ground black pepper, as well as garnish with fresh herbs. Dill, parsley or chives will do well.
To cook potatoes evenly, use tubers of approximately the same size.

Also, as a dressing, you can use not only mayonnaise, but also sour cream or natural yogurt. They can be taken separately or mixed with mayonnaise in any proportion to your taste - this will reduce the calorie content of the dish.
For a more piquant taste, add one teaspoon of mustard to the mayonnaise, mix thoroughly and season the salad with mustard-mayonnaise sauce.
German sausages are traditionally served with potato salad, but it is also very good as an independent dish.
This salad can replace a full dinner.
