Spicy garlic sauce on mayonnaise with chili

Delicious Japanese hot sauce for rolls and sushi! This is a classic Japanese sauce that is used for salad dressing, it is added to the filling for some rolls instead of wasabi or Japanese mayonnaise, and is also served as an independent sauce for sushi. There are several recipes for spicy sauce, they differ greatly in composition. I chose the one with the simplest and most affordable ingredients.

    Peel the garlic and pass it through a press (or grate it on a fine grater).

    Mix, try. The taste should be balanced: quite sharp, but not scalding, moderately salty, with sourness and a barely perceptible fishy smell, which gives the caviar of flying fish. If something is missing, add the right ingredient.

I used homemade Japanese mayonnaise. I did it to my taste, with a pronounced sourness, so I no longer added acid to the spicy sauce. If the mayonnaise is more bland, you can add a little lemon juice.
