Layered Chocolate-Cherry Mousse Dessert

  • This is a very simple, quick dessert. It's so easy to make (and the result is fantastic!) that it's bound to earn a spot in any sweet tooth's recipe book.
  • We'll start by setting the cherries out to thaw. Squeeze the juice out of them gently and lay the cherries on a paper towel to soak up the excess moisture. Use pitted cherries. Now let's make the chocolate mousse. It couldn't be easier! Get all the ingredients ready and break the chocolate into pieces. Set a small saucepan over medium heat, add the chocolate, pour in the sugar, and cover everything with the water. Pour in the rum. Make the mousse, stirring. It's important not to overheat the chocolate so it doesn't go lumpy but stays liquid, so keep stirring the whole time. Also get a bowl of ice water ready ahead of time, big enough to hold the saucepan. As soon as the chocolate mixture is smooth, lower the saucepan into the ice water. Take out the mixer and start whipping the mousse-to-be. Whip for at least 7–8 minutes, until thickened. Decide how thick you want it to your own taste. The mousse is ready. Move on to whipping the cream. Whip it at medium speed, gradually increasing it, to soft peaks, then pour in the rum and whip for another half-minute. Now start assembling the dessert! This part is really fun — pure visual pleasure! Put whipped cream in the bottom of the dessert cups, then chocolate mousse, then cherries. Keep alternating the layers up to the top of the cup. Grate dark chocolate on a coarse grater and sprinkle it over the desserts. Now you can serve them and enjoy!
