Chicken Leg Soup

Rich and fragrant — a soup that restores your strength and does your body good! This chicken leg soup delights the whole family with its flavor and aroma. Since legs alone can yield a thinner broth, go easy on the water. Follow the recipe and you'll end up with a rich broth full of meat. Fresh cilantro is the perfect finishing touch. In Asia, a soup like this is considered not just a dish but a kind of medicine — it builds strength and boosts the immune system.

    1. Rinse the chicken legs and put them in the slow cooker. 2. Rinse the green onion and cut it into large pieces, about 1 1/2 to 2 inches long. 3. Peel the ginger and cut it in half. 4. Add the onion and ginger to the chicken. 5. Pour in water so it sits a couple of inches above the chicken. Don't add too much, or the soup won't taste rich. 6. Add a little salt — there's no need for much; it's better to add more at the end if needed. 7. Set it to the "Soup" program for one hour. The meat should turn very tender, practically falling off the bone. 8. Taste the broth and add salt if needed. Serve the soup with sprigs of fresh cilantro. Enjoy, and here's to your health!
