- It's long been taken for granted that noodles are everyday fare and have no place on a holiday table. And sure, there's some truth to that: noodles on a weekday, noodles on a holiday — no variety at all! But it all comes down to how you make them. Here's a recipe that will be a lovely, anything-but-ordinary addition to your table. Finely chop the cabbage. Chop the nuts. Blanch the squid, then remove the skin and the clear cartilage and cut it into small rectangular strips. Pour boiling water over the noodles for 2 to 3 minutes, then drain in a colander and let them cool for a few minutes. Heat the oil in a wok and fry the chopped garlic until golden. Add the eggs and stir quickly, then add the squid, shrimp, and noodles, and toss well again. Drizzle in the lemon juice and fish sauce and season with the sugar. Add half the nuts, season with the chili, and stirring all the while, add the Napa cabbage and stir-fry everything together over high heat for about 2 minutes. To serve, scatter the remaining nuts over the dish and add a splash of soy sauce to taste. You can also garnish it with fresh herbs. So when guests come over and ask, "What are you serving?" I answer, "Noodles!" They're disappointed, of course, thinking they won't get to try anything new — and then I bring out my masterpiece. After that, just be ready to field the compliments!
