Peanut and Chicken Salad

A salad that works for both a holiday spread and an everyday meal :). A great salad for any table! If you like, you can add layers or swap one out to mix things up — for example, I've made it more than once and figured out you can put in something new each time: shredded raw carrot with garlic and mayo, shredded boiled beet with garlic and mayo, pickled or fried mushrooms, hard or processed cheese, fresh apple or cucumber in a layer with the cabbage, and so on. But it's best to stick to the original recipe and just add or rotate a single layer :D

    How do you make peanut and chicken salad? Boil the chicken (you could also pan-fry it afterward, or use sliced smoked chicken — whatever you like).

    Cut it into pieces and lay it down as the first layer.

    Chop the hard-boiled eggs the same way and add them as the next layer.

    Open the corn and scatter it on as the third layer.

    Shred the cabbage.

    And layer it on top.

    Then coat with mayonnaise (or, better yet, spread a little on each layer as you go).

    If your peanuts are raw, toast them and cut them in half so they're a little smaller.

    And add them as the final layer :). If it's for a holiday table, you can garnish with grapes, tomatoes, apples, and so on.

  • It's best to make the mayonnaise yourself — it'll be tastier and better for you. See our collection for great homemade mayonnaise recipes. You can also use something other than mayonnaise for the dressing: sour cream or plain yogurt, either on their own or mixed with mayo in whatever ratio you like — it cuts down on calories.
  • How do you make hard-boiled eggs? To keep the shells from cracking, start the eggs in cold water and bring them up over low heat. Boil for 9 minutes after the water comes to a boil, then transfer to cold water to cool. The sudden temperature change helps the shells peel cleanly.
  • How do you pick good canned corn? Always check the date on the can. If it's in a glass jar, take a close look at the kernels — they should be uniform in size and color, whole, and free of spots. The ingredient list shouldn't include dyes, preservatives, or flavor enhancers.
