  • Muhallebi is a Turkish milk-based pudding. It owes its delicate texture to the one ingredient you can't skip — rice flour. Here I'm making it with a couple of small tweaks: instead of cornstarch I use the more readily available potato starch, and I like to dust the honey syrup with a little ground cinnamon. To me, honey and cinnamon together are the most delicate scent of the East. Whisk the starch and rice flour into half a cup of cold milk until all the lumps dissolve. Bring the rest of the milk to a boil in a large, heavy-bottomed pan. Stirring constantly, pour in the sugar and the flour mixture and mix well. Reduce the heat to low and cook for about 20 minutes. The whole time, keep stirring the pudding — but be careful never to scrape the bottom of the pan, because if the pudding scorches even slightly, it will ruin the flavor of the whole dish. Pour in 1 tablespoon of the orange syrup and cook a few minutes more, stirring all the while. Rinse the pudding molds with ice water and pour in the finished pudding, then refrigerate until fully chilled. While the pudding cools, make the syrup: in a small saucepan, bring the honey, stirred into 1/2 cup of water, to a boil. Stirring constantly, add the remaining orange syrup, then take it off the heat and let it cool. Just before serving, drizzle the honey syrup over the pudding and sprinkle with the nuts.
