Just about every home cook keeps a few tried-and-true sauces on hand for any occasion. One sauce for salads, another for dressing side dishes — and then there's a whole world of appetizing, fragrant sauces for burgers, one of which is described in this recipe. Its Middle Eastern flavor rarely leaves anyone indifferent.

    Let's get the ingredients ready: liquid soy sauce, vegetable oil, garlic, ground coriander, and tomato paste. For easy measuring, I use large bowls and portion the ingredients into them — it's simpler than measuring grams, since we're cooking something delicious, not mixing medicine at the pharmacy :) So the gram amounts in the ingredient list above may not be exact.

    Take a full bowl of tomato paste, half a bowl of soy sauce, and a third of a bowl of vegetable oil. Grate the garlic on a very fine grater and measure out a heaping teaspoon of ground coriander.

    Start combining everything in this order: first the garlic, coriander, and vegetable oil. Be sure to rub it together well with a spoon so all the aromas and oils blend as thoroughly as possible.

    Now add the soy sauce and stir it in as well.

    All that's left is to thoroughly stir in the tomato paste, which should blend well and evenly with the oil — and your delicious "chocolate-colored" burger sauce is ready.

  • This sauce goes with absolutely any burgers, hot dogs, sandwiches, and more. Its Middle Eastern aroma is irresistible, with a tempting flavor and rich red color. It's especially good for anyone who doesn't like mayonnaise or thick, starchy ketchup. That said, you can also mix this sauce with mustard or mayonnaise. Picture a bun generously spread with bright red sauce, topped with a sizzling patty. It's a winning combination of tomatoes and meat — and far healthier than mayonnaise, for instance. P.S. This sauce is truly versatile. It's tasty with spaghetti, makes a great pizza spread, and can even be used in a stir-fry — and by then the garlic won't smell so sharp anymore, since the oil has already mellowed it. It's also great with French fries or just with potatoes in their jackets.
