Creamy Leek Soup

The most delicate leek soup — a dish for gourmets! It has a subtle, refined flavor, a lovely creamy color with a hint of green, and a velvety texture. For a soup that's both tasty and pleasantly thick, use a starchy, floury variety of potato.

  1. Step 1:

    Gather the ingredients for the leek soup: leeks, potatoes, cream, water, salt, ground black pepper, and butter.

    Cut off the tough green tops of the leeks — we'll use only the white part. Trim off the root end, too. Slice the leeks lengthwise, separate the layers, and rinse thoroughly. Take washing seriously: grit and sand love to hide between the layers. Cut the cleaned leeks into half-moons or rings.

    Melt the butter in a heavy-bottomed pot. Add the leeks and cook over medium heat, stirring, until soft — don't let them brown.

    Wash and peel the potatoes. Cut them into small pieces and add them to the pot with the leeks. Pour in the water — the amount is approximate; it should just cover the potatoes. Add salt and pepper, bring to a boil, and cook for 20–25 minutes, until the potatoes are completely tender.

    Pour in the cream (I used 10%), heat the soup almost to a boil, and take it off the heat.

    Blend everything with an immersion blender until smooth and silky. Serve the leek soup right away. Top each bowl with finely diced bell pepper, a sprinkle of chopped herbs, and a little grated nutmeg.

  • It's very important to wash the leeks thoroughly so no sand ends up in the soup. Instead of water, you can use vegetable broth for a richer, fuller flavor. Use natural butter that's as fresh and high-quality as possible.
