An Olivier with a touch of summer flavor — freshness on the New Year's table! In our family we love Olivier made with fresh cucumber. This brighter, more spring-and-summer take on the salad is especially light and fresh on a holiday spread. (Olivier is the classic Eastern European potato salad.)

- How do you make a classic Olivier with fresh cucumber?
- Wash the carrots and potatoes — no need to peel them. Set them to boil. 2. Boil the eggs in a separate pot. 3. Wait for the carrots, potatoes, and eggs to cool. 4. Meanwhile, dice the sausage and the fresh cucumbers small. 5. Cut the potatoes, carrots, and eggs into the same-size dice. 6. Put everything in a bowl, add the green peas and salt, and mix well. 7. Dress the salad with mayonnaise. The Olivier is ready to serve, or you can chill it for a couple of hours in the fridge. Enjoy!
- It's worth making your own mayonnaise — it tastes better and is better for you. You can also use sour cream or plain yogurt as the dressing instead of, or mixed with, the mayonnaise in any ratio you like, which lightens up the dish.
- How do you hard-boil eggs? To keep them from cracking, start them in cold water over low heat. Boil for 9 minutes once the water comes to a boil, then transfer to cold water to cool — the sudden temperature change makes them easier to peel.
