"Yum-Yum" Salad with Pineapple
Original, incredibly tasty, and made for a party! This "Yum-Yum" pineapple salad is a great example of getting a really interesting dish — in both flavor and looks — from just a handful of ingredients. The pineapple makes it bright and bold, and despite the sweetness it all comes together beautifully.

Step 1:
How do you make the "Yum-Yum" pineapple salad? Gather your ingredients. Instead of smoked pork loin, you can use any other smoked pork — ham or roast pork — or swap it for smoked chicken. Drain the canned corn in a colander.

Drain the juice from the canned pineapple and cut the fruit into small cubes. You can gently squeeze the pieces to get rid of excess liquid. I used pineapple rings, but canned chunks work fine too.

Hard-boil the eggs, cool and peel them, and chop them finely.

Cut the smoked pork loin into small cubes.

Assemble the salad. I built mine in layers using a ring mold, but you can simply toss everything together in a bowl or plate it in individual dishes. Lay the lettuce leaves on a platter and set the ring mold on top. Spread the corn in and press it down. Pipe a lattice of mayonnaise over it.

Step 6:
Spread the pork loin over the corn and add another layer of mayonnaise.

Scatter the chopped eggs over the pork and spread with the remaining mayonnaise.

Spread the pineapple evenly over the top. Refrigerate the salad for 30 minutes to let it set. Before serving, lift off the ring mold and garnish to taste. Enjoy!
- How do you hard-boil eggs? To keep them from cracking, start them in cold water over low heat. Boil for 9 minutes once the water comes to a boil, then transfer to cold water to cool — the sudden temperature change makes them easier to peel.
- How do you choose good canned corn? Always check the use-by date. If it's a glass jar, look the kernels over: they should be uniform in size and color, whole, and unblemished. The ingredient list shouldn't include dyes, preservatives, or flavor enhancers.
- It's worth making your own mayonnaise — it tastes better and is better for you. You can also use sour cream or plain yogurt as the dressing instead of, or mixed with, the mayonnaise in any ratio you like, which lightens up the dish.
