Step-by-step cooking
Step 1:
Prepare the products required by the recipe. Take minced meat from any meat that you like. If you buy ready-made, take high-quality without additives. But it's better to make the stuffing yourself. I have beef, pork and chicken. Choose medium potatoes and onions. Cheese - parmesan or other hard similar to taste.
Step 2:
Peel the potatoes from dirt, rinse and cut into pieces about 2x2 cm in size. So it will boil faster. To prepare the soup, take a pot with a volume of 5 liters or more. Boil water in it. Put the potatoes in there, cover with a lid and cook for 25 minutes over medium heat.
Step 3:
Peel the onion and garlic, rinse and cut into small cubes. This slicing is considered classic for this soup. But if you don't like onion slices in the soup, lower the peeled onion into the broth entirely.
Step 4:
To roast minced meat, take a saucepan or a deep frying pan. Cut half of the butter into small pieces and melt it in a deep frying pan over medium heat.
Step 5:
Transfer the minced meat, sugar and spices to the pan. Fry, stirring, over medium heat for 15 minutes. If large lumps of minced meat form, break with a spatula.
Step 6:
Put the remaining oil in a frying pan with minced meat. When it is completely melted, put the onion and garlic.
Step 7:
Mix everything and fry for another 5 minutes so that the onion and garlic give their flavor.
Step 8:
Transfer the boiled potatoes to a separate deep container with a small amount of broth. If you boil the onion whole, take it out with the onion.
Step 9:
Chop potatoes (or potatoes with onions) into puree using a blender.
Step 10:
Return the resulting puree to the pot with the broth. Pour in the cream. Bring to a boil and put the fried minced meat in a saucepan.
Step 11:
Add salt to taste, mix everything and cook for 15 minutes.
Ready-made Tuscan soup with minced meat is served hot in portions, garnished with a lettuce leaf and grated cheese. It tastes delicate, creamy and spicy. Such a light soup can be served with wheat crackers. The consistency of the soup is not very thick. If you like a thicker soup, take a large potato or a larger amount.
