The word "sherry" can only be called wine produced in Spain in Andalusia.
Sherry wine can be divided into two categories. These are Fino-type sherry and Oloroso-type sherry.
Fino sherry is made from Palominho grapes, which are grown exclusively on chalky soil. Fino sherry is always dry, its strength is eighteen percent. Fino sherry is aged under a fleur. Fleur is a fungus (or flower) formed on the surface of wine and having the appearance of a thin film.
Oloroso sherry is sherry that is not stored under a fleur, does not even form it. Wort and alcohol are added to Oloroso sherry. The strength of this sherry is kept at the level of sixteen percent. Oloroso sherry can be sweet, semi-sweet, dry. Everything depends only on the technology of its preparation and on how quickly the fermentation of sherry will be stopped.
