"Lady's Whim" Layered Salad with Chicken and Prunes
A layered salad for the holiday table with a subtle smoky note. It's a great fit for a New Year's spread and easily rivals the usual Olivier. This lineup of ingredients all but guarantees success, and thanks to the fresh cucumber the salad comes out refreshing and fragrant. Delicious!

Step 1:
How do you make "Lady's Whim" salad with chicken and prunes? Gather your ingredients. Cook the chicken breast: rinse it and trim off any membranes and excess fat. Pour about 1.5 liters of water into a pot; when it boils, add salt and the chicken. You can add a few peppercorns and a bay leaf. Cook, covered, for about 20 minutes after the water returns to a boil — if a knife slides in easily, it's done. Let it cool right in the broth so it doesn't dry out.

Rinse the pitted prunes in cold water. Put them in a bowl, cover with boiling water, and let them sit about 10 minutes, then drain in a colander.

If the cucumber skin is intact and not bitter, leave it on. Wash the cucumbers and cut them into small pieces or grate them into thick strips on a mandoline.

Grate a good hard cheese — finely is best, so the cheese layer on the salad stays light and airy.

Cut the cooled chicken into small cubes.

Cook the eggs: cover them with cold water, add salt (about 1 teaspoon), bring to a boil, and cook for about 8-10 minutes. Drain the hot water and cover with cold. Once cool, peel the eggs and dice them with a knife or push them through an egg slicer — or grate them coarsely.

Pat the softened prunes dry with paper towels and cut them into small pieces.

Set a plating ring or the springform side of a cake pan on a flat platter.

First, lay down a layer of the chopped chicken.

Spread mayonnaise over the chicken.

Next, add a layer of cucumbers.

Spread mayonnaise over them too.

Spread the chopped eggs evenly over the cucumber layer.

Coat the egg layer with the remaining mayonnaise.

Lay the chopped prunes over the eggs, holding a few back to decorate the top.

Cover the prune layer with the grated cheese.

Decorate the top with the reserved prune pieces.

Carefully lift off the ring, and your "Lady's Whim" salad with chicken and prunes is ready.

- For this salad, dried pitted prunes are best, and the cucumbers should be fresh, not pickled.
- I recommend making your own mayonnaise — tastier and better for you. You'll find recipes for it elsewhere on the site.
- You can replace the mayonnaise with sour cream, a sour cream–mayonnaise mix, or plain unsweetened yogurt.
- If you like, toast some walnuts in a dry skillet, grind them in a blender, and sprinkle them over the top.
- You can also build this in clear individual glasses in layers, or simply toss all the ingredients together with the dressing.
