Cooking method

  1. Step 1:

    Step 1

Rinse the rice and boil it until tender, then let it cool completely—don't rinse it after cooking, so it stays sticky. Pour the liquid from the canned salmon into a bowl (you'll need it shortly), pick out the bones, and mash the fish with a fork.

  2. Step 2:

    Step 2

Hard-boil the eggs by lowering them into boiling water with a little salt for 10 minutes. Then move them to cold water to cool. Peel the eggs and separate the yolks from the whites. Make the sauce: mash the two cooked yolks with the salmon liquid and the mustard, then add the grated cheese and grated whites.

  3. Step 3:

    Step 3

Add the soy sauce, chopped herbs, and pepper.

  4. Step 4:

    Step 4

    Mix everything well.

  5. Step 5:

    Step 5

Now start assembling the salad. First, mound part of the rice on a platter in the shape shown in the photo.

  6. Step 6:

    Step 6

Spread the rice with the sauce.

  7. Step 7:

    Step 7

Add a layer of the fish mixture on top.

  8. Step 8:

    Step 8

Spread the fish layer with sauce.

  9. Step 9:

    Step 9

Keep layering rice and fish, alternating them and spreading sauce between the layers. Shape it into a finished Santa figure—see the photo for an example.

  10. Step 10:

    Step 10

Make red mayonnaise for decorating: stir beet juice or food coloring into the mayonnaise until the color is even.

  11. Step 11:

    Step 11

Spread the red mayonnaise over Santa's body, cheeks, and hat.

  12. Step 12:

    Step 12

Spread white mayonnaise on the beard and the trim of the coat; use cloves for the eyes.

  13. Step 13:

    Step 13

Use black olives for the hands and feet.

  14. Step 14:

    Step 14

    Cut snowflake-stars out of cheese.

  15. Step 15:

    Step 15

Let the salad sit in the fridge for about two hours so the flavors meld.
