Chicken Liver and Pomegranate Salad

For me, this chicken liver and pomegranate salad is all about the New Year — its unusual shape, bright color, the tree, the ornaments, the snow, the winter. But that doesn't mean it's only for the holidays; it's right at home on a festive table any time of year.

- How do you make chicken liver and pomegranate salad? Start by prepping the ingredients: boil the potatoes (in their skins) and the eggs until done, and boil the chicken liver too (or pan-fry it — your call). Grind the walnuts and cooked chicken liver in a blender. Grate the cooled potatoes, the eggs, and the fresh carrot and apple. Chop the onion and sauté it in vegetable oil. Choose a flat serving plate and set a tall glass in the center, greasing it first with a little oil. Layer the prepared ingredients around the glass, spreading mayonnaise over each layer (except the onion, eggs, and nuts), and salting the layers if needed: layer 1, potatoes; layer 2, fresh carrot; layer 3, chicken liver; layer 4, sautéed onion; layer 5, eggs; layer 6, ground walnuts; layer 7, fresh apple; layer 8, pomegranate seeds. Once all the layers are in place, lift out the glass. Chill the salad in the fridge so it can set. After an hour and a half it's ready to serve, garnished with a sprig of parsley or other herbs. Enjoy!
