    How do you make salmon and cucumber open sandwiches? Very simple and fast! First, gather all the ingredients from the list. Instead of a regular loaf, you can use a wheat baguette. You can replace the cream cheese with plain melted cream cheese or other cheeses like mozzarella or feta.

    Cut the salmon or other salmon-family fish into thin slices. I used pre-sliced fish, which saved me time. If you use a whole piece of cured fish, freeze it slightly first to make slicing easier.

    Wash and dry the cucumber and cut it into thin rounds. If the skin isn't tough, damaged, or bitter, there's no need to peel it. I didn't peel mine.

    Peel the garlic and press it through a garlic press.

    Combine the cream cheese with the garlic and mix thoroughly.

    Spread the slices of white bread with the garlic cream cheese. If you like, you can toast the bread first in a toaster or a dry skillet. In that case, be sure to let the bread cool to room temperature, or the cheese will slide off the warm bread.

    Arrange cucumber slices over one half of each slice.

    On the other half, arrange the salmon slices.

    Garnish each sandwich with fresh herbs — I used parsley. Then sprinkle with pomegranate seeds. Serve the salmon and cucumber sandwiches right away. Enjoy!

  • Since everyone's preference for saltiness, sweetness, bitterness, spiciness, tanginess, and heat is different, always add spices and seasonings to your own taste! If you're using a seasoning for the first time, keep in mind that some spices are especially easy to overdo (chili pepper, for example).
  • You can make these sandwiches with any lightly salted or smoked salmon-family fish. They're just as delicious with white smoked or cured fish — escolar, whitefish, or smoked or salted mackerel or herring all work well.
