  • How do you make a corn and apple salad? You can make it any time of year. In winter and spring it's a bright addition to the table and a reminder that summer is on its way! It goes with any meat or fish dish. In summer, when you don't want heavy, hot food in the heat, it makes a great lunch or dinner. And in fall it'll remind you of those bright, warm summer days! Let's get started. 1. Gather all the ingredients. 2. Wash the apples, tomatoes, and lettuce leaves well. 3. Cut the tomatoes into small cubes; peel the apples, core them, cut them into small pieces, and sprinkle them with lemon juice so they don't brown. Tear the lettuce into small pieces by hand. 4. Open the corn, drain the liquid, and add it to the salad. 5. Open the olives and cut them into rings. 6. Squeeze lemon juice from a washed, halved lemon into the salad. 7. Add whatever vegetable oil you like. 8. Salt to taste. Mix all the ingredients well. Taste the salad and add salt or lemon juice if something's missing. You can use a sweet apple if you prefer a sweeter taste, or a tart apple if you like a bit of acidity. The olives can be green or black, whichever you prefer. The corn can be canned or frozen — thaw it, rinse it with boiled water, and add it to the salad. In season, you can buy fresh young sweet corn and use that; you'll get the most goodness from it that way, of course! You can also replace the lettuce with napa cabbage, iceberg lettuce, or other kinds of greens. You can experiment with the oil, too. Cold-pressed oils are best — they're the healthiest.   • Choose juicy but firm tomatoes. Soft ones don't hold their shape well; as you cut and prepare them they'll fall apart into a shapeless mush and spoil the look of the dish.
