Smoked Fish and Cucumber Salad

  • Rinse the eggs under cold water, put them in a small pot, and cover with water. Set the pot over medium heat and bring to a boil, then lower to a moderate heat and cook until hard-boiled, about 8–10 minutes from the time the water boils. Drain the hot water and cover the eggs with cold water; once they've cooled, peel them and cut them into fairly large rounds. Rinse the cucumbers and radishes under running water and pat them dry with paper towels, then slice the vegetables thin with a mandoline or grater. Cut the smoked fish (salmon, trout, or other) into thin strips. Rinse the dill well under cold water and dry it on a paper towel (or in a salad spinner) — set aside a couple of sprigs for garnish, trim the tough stems, and finely chop the rest. Make the dressing: in a small bowl, combine extra-virgin olive oil, balsamic vinegar, and yogurt. A plain, low-fat yogurt with no additives or flavorings works best — it blends most smoothly for an even dressing. Add a little mustard for a piquant kick, stir in the chopped dill, and mix well. Taste and adjust with salt and black pepper. Combine all the prepped ingredients — eggs, fish, and vegetables — in a salad bowl and drizzle the dressing over the top. Garnish with the reserved dill sprigs and serve right away. Enjoy!
