- For this dish you'll need ground fish — you can use walleye, cod, catfish, or any other fish that's low in small bones. Season the fish with salt and ground black pepper to taste, plus any other spices you like. Peel, rinse, and pat dry the onion and carrots. Grate the carrots on the large holes and finely dice the onion. Melt a pat of butter in a skillet over medium heat, add the chopped vegetables, and sauté until golden, stirring constantly with a wooden spatula, then take the skillet off the heat and let the onion and carrot cool. Add them to the bowl of ground fish, crack in one egg, and mix everything together well, kneading the mixture thoroughly so it becomes more pliable. Preheat the oven to 400°F (200°C). Put the remaining three eggs in a small pot, cover with water, and bring to a gentle boil over low heat (so they don't crack). Hard-boil them for 10–12 minutes, then drain and cover with cold water to cool quickly. Once cool, peel them and leave them whole. Lay a sheet of foil on the counter and spread the fish mixture over it in an even, fairly thin rectangle. Place the boiled eggs along one edge, then lift that edge of the foil and roll the fish around the eggs to form a stuffed loaf, tucking the ends in tightly. Transfer the foil-wrapped loaf to a baking sheet and bake for half an hour. Take it out, let it cool slightly, and unwrap the foil. Drizzle the finished fish loaf with sour cream and garnish with fresh herbs! Enjoy!
